Alice Waters established the Chez Panisse Foundation in 1996 to celebrate the 25th birthday of Chez Panisse Restaurant. On the occasion of the restaurant’s 40th birthday the foundation was renamed the Edible Schoolyard Project.
The Edible Schoolyard Project models and promotes edible education – a comprehensive program to unite education with school lunch. The organization’s mission is to build and share a national edible education curriculum for pre-kindergarten through high school. This vision includes gardens and kitchens as interactive classrooms for all academic subjects, and a sustainable, delicious, and free lunch for every student.
Edible education offers an accessible and inherently democratic means of nourishing young bodies and minds. Experience shows that school communities are transformed when they integrate garden and kitchen classrooms with lunchrooms as part of the academic day.
